Busy Day Burrito Bowls

One of my favorite recipes for a busy day and quick dinner. Super fast cooking and loved by the entire family!

Ingredients
  

  • 1 lb ground turkey
  • 1 medium onion diced
  • 1 red pepper diced
  • 1 can diced tomatoes
  • 1 can sweet corn drained
  • 1 can black beans drained and rinsed
  • 2 tbsp garlic minced
  • 3 tbsp taco seasoning (or one packet)
  • .5 cup water
  • 1 romaine heart shredded
  • .5 cup shredded cheddar
  • .5 cup guacamole (optional, for topping)

Instructions
 

  • In a large saucepan with high walls, add the onion and ground turkey. Cook until turkey is no longer pink. Break turkey into crumbles while cooking. drain the fat.

  • Add diced tomatoes, sweet corn, black beans, red pepper, garlic, taco seasoning, and water. Stir well and simmer for 5-10 minutes (until water has cooked off and sauce has thickened).

  • Layer in bowls with lettuce, cheddar and guac (optional) on top.
    1 romaine heart, .5 cup shredded cheddar, .5 cup guacamole

Notes

This reheats amazingly! Just keep the cheese, guac and lettuce out of the mix until ready to eat. Use any ground meat or plant based meat you desire!
