Greek Quinoa Salad
Delicious and super filling Greek inspired salad.
Ingredients
- 1 cup quinoa cooked and chilled (makes about 3 cups cooked)
- 1 bell pepper color is unimportant
- 1 red onion diced
- 1 cup feta crumbled
- 1 cucumber peeled and diced
- 1 can canned garbanzo beans drained and rinsed
- 1 cup cherry tomatoes halved
- 1/2 cup Gerard's Greek Feta dressing
- 1/2 cup kalamata olives sliced (optional)
Instructions
- after cooking and chilling the quinoa in the fridge for at least an hour, add dressing and feta and mix well.1 cup quinoa, 1/2 cup Gerard's Greek Feta dressing, 1 cup feta
- add in remaining ingredients and mix well1 bell pepper, 1 red onion, 1 cucumber, 1 can canned garbanzo beans, 1 cup cherry tomatoes, 1/2 cup kalamata olives
Notes
This salad is best if you make ahead and chill for at least an hour before serving. This lets all the flavors meld. Holds in the fridge covered for about 4 days.
