Southwestern Quinoa Salad
Delicious and super filling Southwestern inspired salad.
Ingredients
- 1 cup quinoa cooked and chilled (makes about 3 cups cooked)
- 1 bell pepper color is unimportant
- 1 red onion diced
- 1 can canned sweet corn drained
- 1 can canned black beans drained and rinsed
- 1 cup cherry tomatoes halved
Homemade Salsa Ranch Dressing
- .25 cup mayonnaise
- .5 cup plain greek yogurt
- .25 cup milk
- 4 tsp Hidden Valley Ranch Seasoning (half a packet)
- 1/8 cup salsa
Toppings
- 1 cup cheddar shredded
- 1 cup guacamole
Instructions
- make dressing. combine all dressing ingredients and whisk until combined. cover and chill for at least 30 minutes to let the dressing thicken..25 cup mayonnaise, .5 cup plain greek yogurt, .25 cup milk, 4 tsp Hidden Valley Ranch Seasoning, 1/8 cup salsa
- cook and chill the quinoa in the fridge for at least an hour. Add dressing and combine well.1 cup quinoa
- add in remaining ingredients (minus toppings) and mix well1 bell pepper, 1 red onion, 1 can canned sweet corn, 1 can canned black beans, 1 cup cherry tomatoes
- when ready to eat, top with about 2 tbsp. of cheddar and 2 tbsp. of guac.1 cup cheddar, 1 cup guacamole
Notes
This salad is best if you make ahead and chill for at least an hour before serving. This lets all the flavors meld. Holds in the fridge covered for about 4 days.
Most of the fat and calories are from the toppers (cheddar cheese and guac). If you are fat or calorie averse, you can reduce/remove these.
